Cup4Cup, created by Lena Kwak and Chef Thomas Keller, is a complete multipurpose, gluten-free
flour blend that successfully replaces all-purpose
flour in equal amounts in quick bread, scone,
muffin, cookie, cake and biscuit recipes. The flour
has been in use at the TKRG kitchens, including
The French Laundry and Per Se, to accommodate
gluten-free requests from guests. Converting
regular recipes to gluten-free usually requires
trial and error since gluten-free alternatives don’t
always match up cup-to-cup; until now, that is.
Tucked away in the new exhibition area in the Grand Ballroom was
a charming display of small round cakes on sticks, or Cake Pops,
in six delicious flavors, including Red Velvet, Chocolate, Vanilla
Bean, Lemon and seasonal flavors Brown Butter Pumpkin and Gingerbread. The cakes all have subtle variations in the decoration to
tell them apart and, when assembled together, make an exquisite
centerpiece for a fun party. Handmade with all-natural ingredients,
the same ingredients you would use at home.
