The owner, Bobby McGee (you gotta love a man with his own
song), has a lot of great stories about barbecue, Texas cattle
drives and the origins of salsa (the chuck wagons always carried a wooden cask of stewed tomatoes to which they would
add peppers and whatever vegetation they could find on the
trail, a concoction that eventually became salsa as we know
it), and he also makes a terrific sauce for chicken (or anything
else) called Jardine’s Chik’n-Lik’n. Made with mustard and a
touch of Jardine’s Texas Champagne Pepper Sauce.
